Professional Restaurant Management is a two-year course that gives students the opportunity to explore the food service industry and develop skills for employment based on industry standards. The program includes food preparation and service experiences in commercial and institutional operations related to restaurants, bakeshop, snack bar and catering. Students learn food safety principles,professional food-handling techniques, and quantity preparation through the use of commercial equipment and systems technology. Sanitation, safety, personal hygiene, and workplace skills are emphasized daily.

- Describe several job opportunities in the hospitality industry
- Use safety and sanitation principles, which are required in safe food handling
- Identify the principles involved in the prevention of food-borne illness
- Use and care for commercial food service equipment
- Display evidences of acquired self-development and work attitudes compatible to obtaining and maintaining a job
- Complete a culminating activity each year during the course of study

- Fewer than 10 absences in the application year
- Other Family and Consumer Science classes recommended
- Ability to independently outline and use text written at a 10th-12th grade level
- Fine motor skills necessary for measurement, ude of kitchen equipment and cooking techniques
- Ability to independently attend to and complete task when assigned
- Ability to work with others in kitchen production that must be completed by a deadline for catering working and running a restaurant
- Basic math skills including work with fractions needed to cut recipes in 1/2 etc.
