Hominy

     Hominy is made by soaking dry corn kernels in lye water for a few days. Lye water comes from collecting water poured through wood ashes. Some people soak the kernels in a mixture of ashes and water. This makes the kernels puff up and split open. Next, the corn is rinsed many times in cold water to clean away the lye water. The hominy is cooked in a pot or fried in a pan over a fire.
