Spray Plantation, Near the St. Mary's River, Maryland, l661
Garden vegetables include peas, beets, onions, radishes, parsnips, carrots, cabbage, and sweet potatoes. There are leafy greens for salads, although sometimes the family likes to eat dandelion leaves and other greens that grow wild.
Flowers are not only pretty to look at but are often eaten in salads. Some people believe that eating certain flowers will lift their spirits as well as nourish them.
A paling fence surrounds the kitchen garden. Boards over six feet tall are set deep in the ground and close together. Hogs can't dig, or root, under them and larger animals like deer and cattle can't get through them.
