Spray Plantation, Near the St. Mary's River, Maryland, l661

The Kitchen

The kitchen is used for preparing and preserving foods and for storage. There is no fireplace here. Vegetables soak in a barrel of salt water. They are being pickled to preserve them for winter. Wild grapes, berries and other fruits are drying in baskets. Strings of drying apple rings, peppers and beans hang from the ceiling. Sunflower seeds and hams and ears of corn hang further up in the rafters. The odor from a garland of dried marigolds hanging over the open window keeps insects away.

The smell of marigolds repels insects.
